Sara here... I just wanted to share a craft I did with my one year old daughter that suprisingly enough turned out to be a success. I have always wanted to do crafts with my kids but I wasn't really sure what you could do with a one year old. Someone told me about pudding painting so I decided to give it a try. I didn't really want her eating the boxed chocolate pudding so I made my own. It was really easy! I got the recipe from the Deceptively Delicious cookbook (which I love). Here is the recipe....
1/4 cup trans-fat-free soft tub margarine spread
1 cup avocado puree (it took one avocado for me..mash it with a fork and make it fine in the food processor)
1 cup confectioners sugar
1/2 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
1/4 cup cornstarch
Directions: Melt the margarine on low in a medium saucepan. Stir in the avocado puree, sugar, cocoa powder, and vanilla. Cook mashing well with silicone spatula to smooth out any avocado lumps until mixture thickens about 3 to 4 min. Off the heat, gradually stir in cornstarch. Serve warm.
Mine was slightly lumpy but it was still really good. Couldn't even taste the avocado! I felt better about letting my daughter dig in knowing she was still getting some of her veggies. If you haven't tried this with your little one you should. Clean up wasn't even too bad and she had so much fun!
